  • 2 cups Wholesome Yum Blanched Almond Flour
  • 2/3 cup Whey protein powder
  • 1 tablespoon Baking powder
  • 4 teaspoons Cinnamon
  • 1/2 teaspoon Sea salt

Wet Ingredients

  • 3 medium very ripe Bananas (about 1.5 cups mashed)
  • 3 large Eggs
  • 1/3 cup Wholesome Yum Zero Sugar Maple Syrup
  • 4 tablespoons Unsalted butter melted (or coconut oil)
  • 1/2 cup Cottage cheese (or ricotta cheese for a slight sourdough hint)
  • 1/2 tablespoon Vanilla extract

Optional

  • 2/3 cup Sugar-free dark chocolate chips (optional, plus extra for topping)

Instructions
 

  • Preheat your oven to 350°F (176°C). Line a 1-pound loaf pan with parchment paper, making sure some paper hangs over two opposite sides for easy lifting later.
  • In a spacious bowl, whisk together the almond flour, protein powder, cinnamon, baking powder, and sea salt until they're thoroughly combined. This creates your dry base.
  • Grab your blender and add the mashed bananas, eggs, maple syrup, melted butter, cottage cheese, and vanilla extract. Blend these ingredients until you have a perfectly smooth and creamy mixture.
  • Gently pour the blended wet ingredients into the bowl with your dry mixture. Stir everything together just until it's combined – avoid overmixing to keep the bread tender. If you're using chocolate chips, fold them in now.
  • Transfer the batter into your prepared loaf pan. You can give it a gentle stir in the pan to ensure the chocolate chips are well distributed, then sprinkle a few more on top for a pretty finish.
  • Place the loaf in the preheated oven. Bake for 30-35 minutes, until the top is lightly golden and has risen into a lovely dome shape. At this point, loosely cover the loaf with aluminum foil to prevent it from getting too dark, and continue baking for another 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • This is key for perfect slices! Let your high-protein banana bread cool completely in the pan before attempting to remove it and slice. This allows it to set properly and prevents crumbling. Enjoy your wholesome treat!
