  • 2 tablespoons brown sugar replacement
  • 6 garlic cloves pressed
  • 3 tablespoons avocado oil divided
  • 1 tablespoon Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon paprika
  • 1/4 teaspoon chipotle powder or cayenne, optional
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 pounds pork tenderloin

Instructions
 

  • Oven Prep: Get your oven ready by preheating it to a toasty 425°F (220°C).
  • Make the Flavor Paste: In a medium bowl, whisk together the brown sugar replacement, all the pressed garlic, 2 tablespoons of the avocado oil, Dijon mustard, apple cider vinegar, paprika, and the optional chipotle powder. You'll end up with a wonderfully thick and aromatic paste.
  • Season the Pork: Pat your pork tenderloin completely dry with paper towels, then sprinkle it evenly all over with the salt and pepper.
  • Sear for a Great Crust: Heat the remaining 1 tablespoon of avocado oil in an oven-safe skillet over medium heat. Place the tenderloin in the hot skillet and brown it on all sides for about 4 minutes to create a delicious golden crust.
  • Coat with Goodness: Generously spread the garlic paste you prepared earlier all over the browned pork tenderloin.
  • Bake to Perfection: Transfer the skillet, uncovered, to your preheated oven. Bake for 18 to 25 minutes, or until an instant-read thermometer inserted into the thickest part of the pork reaches 140°F (60°C).
  • Rest and Enjoy: Carefully remove the tenderloin from the oven and let it rest on a cutting board for 5 minutes before slicing. This helps keep it super juicy and tender!
