- 20 ounces frozen strawberries thawed, strained, with juice reserved
- 12 ounces frozen raspberries thawed, strained, with juice reserved
- 1 1/3 cups powdered sugar divided
- 1 1/2 teaspoons cornstarch
- 3/4 cup heavy whipping cream
- 48 ounces nonfat vanilla Greek yogurt (3 large containers)
- 40 crispy ladyfingers broken in half
- 2 tablespoons orange liqueur (optional, such as Cointreau)
- 16 ounces frozen blueberries thawed and drained
In a medium saucepan, gently whisk together the reserved strawberry and raspberry juices with 2/3 cup of the powdered sugar and the cornstarch. Cook over medium heat for 1 to 2 minutes until the mixture thickens into a glossy berry glaze. Transfer this lovely glaze to a medium bowl and pop it in the refrigerator to cool for about 20 minutes.
While the berry glaze is chilling, take a medium bowl and whip the heavy cream until it forms beautiful, stiff peaks; set this aside. In a large bowl, combine the nonfat vanilla Greek yogurt with the remaining 2/3 cup powdered sugar. Gently fold in the whipped cream until it's just blended, creating a light and airy yogurt cream.
Arrange half of the broken ladyfingers evenly at the bottom of a 2-quart glass bowl or trifle dish. If you're using it, lightly drizzle 1 tablespoon of the orange liqueur over the ladyfingers. Spoon one-third of your creamy yogurt mixture over them. Next, spread half of the thawed berries evenly, then drizzle with 3 to 4 tablespoons of the chilled berry glaze. Repeat this layering: another one-third of the yogurt mixture, followed by the remaining ladyfingers (drizzle with the last 1 tablespoon of liqueur, if using), and finally the rest of the yogurt mixture. Top with the remaining berries and a final drizzle of 3 to 4 more tablespoons of the berry glaze. Refrigerate your trifle for at least 2 hours to allow all the delicious layers to meld and chill thoroughly before serving.
