Ingredients
  

  • 1 sheet puff pastry thawed (from ½ a standard box)
  • 8 ounces brie cheese cut into small, bite-sized pieces
  • 3 tablespoons cranberry sauce or your favorite fruit jam like raspberry or apricot
  • 1/4 cup chopped walnuts or pecans/almonds for variety
  • Fresh thyme or rosemary leaves for a pretty garnish
  • A pinch sea salt
  • freshly ground black pepper

Instructions
 

  • Get Ready: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin. This ensures nothing sticks and makes cleanup easy!
  • Roll it Out: On a lightly floured surface, gently roll out the thawed puff pastry into a thin rectangle or square, roughly 10x12 inches.
  • Cut the Squares: Using a sharp knife, cut the rolled pastry into 16 equal 2 ½-inch squares. These will be the perfect little cups for your bites.
  • Brie Prep: Make sure your brie cheese is cut into small, convenient pieces that will fit nicely into each muffin cup. (The rind is edible, but you can trim it if preferred for a smoother texture!)
  • Assemble with Love: Carefully press a pastry square into each mini muffin cup. Add a piece of brie, then a small spoonful of cranberry sauce, and finish with a light sprinkle of chopped walnuts.
  • Bake to Golden: Pop the filled tin into your preheated oven and bake for 10-15 minutes. Watch for the puff pastry to turn beautifully golden and the brie to get wonderfully melty.
  • Cool & Release: Let the bites cool for a couple of minutes after baking. To easily remove them, gently run a knife around the edges of each cup and scoop them out with a small spoon.
  • Garnish & Serve: Garnish your warm, delicious bites with fresh thyme or rosemary leaves, a tiny pinch of sea salt, and a dash of black pepper. They're best served warm to enjoy the gooey brie!
