Ingredients
  

  • 18-24 large, ripe strawberries
  • 1 cup heavy whipping cream chilled
  • 1 package cream cheese (8 ounce), softened at room temperature
  • 1/3 cup sour cream
  • 2/3 cup granulated sugar (or use a low-carb sweetener for a healthier option)
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice optional, for a bright tang
  • 1/2 cup graham cracker crumbs (omit for low-carb/gluten-free)

Instructions
 

  • Begin by gently washing and hulling your beautiful strawberries, then slice each one neatly in half. For perfect presentation, lightly trim a small piece from the rounded back of each strawberry half so they sit flat and stable on your platter. Carefully scoop out a tiny bit of the center using a melon baller or a small spoon, just enough to cradle your delicious filling.
  • In a clean, medium mixing bowl, whip the chilled heavy cream with an electric mixer until firm, fluffy peaks form – this usually takes about 5 minutes. Set aside.
  • In a separate bowl, combine the softened cream cheese, sour cream, sugar (or your chosen sweetener), vanilla extract, and optional lemon juice. Beat with your electric mixer until the mixture is wonderfully smooth, creamy, and lump-free.
  • Gently fold the prepared whipped cream into your smooth cream cheese mixture until everything is just combined and airy. Be careful not to overmix, keeping that lovely light texture.
  • Transfer this delightful filling into a piping bag fitted with a star tip (or simply use a spoon if you prefer). Generously pipe or spoon the filling onto each hollowed strawberry half, creating a beautiful, inviting mound.
  • For a lovely finishing touch, sprinkle a little graham cracker crumb over each filled strawberry. (Remember to skip this step if you're making them low-carb!)
  • Arrange them beautifully on a platter and serve immediately, or chill for a bit before enjoying your healthy and sweet Valentine's treat!
