Ingredients
  

  • 5 tablespoons olive oil
  • 0.5 standard baguette sliced into 8 pieces (about ΒΌ-inch thick)
  • A pinch sea salt
  • 0.5 cup soft goat cheese
  • 1 ripe pomegranate (for arils)
  • 2-3 tablespoons chopped salted pistachios
  • A few torn fresh mint leaves (optional)
  • A drizzle balsamic glaze or honey (optional)

Instructions
 

  • Warm up a large skillet over medium heat and add the olive oil.
  • Carefully place the baguette slices in a single layer in the warm skillet. Cook for about 2 minutes until one side is golden and crispy.
  • Flip each baguette slice, sprinkle with a pinch of sea salt, then remove them to a plate. The second side won't be as toasted, which is perfect for spreading.
  • Once the toasted baguette slices are cool enough to handle, spread about 1 tablespoon of creamy goat cheese evenly on the golden side of each slice.
  • Generously sprinkle each crostini with about 1 teaspoon of juicy pomegranate arils and a scant teaspoon of crunchy chopped salted pistachios.
  • For an extra touch of freshness, scatter some torn mint leaves over the top. If desired, finish with a light drizzle of balsamic glaze or honey.
  • Serve these delightful crostinis immediately to enjoy their crispness and vibrant flavors!
