  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1/3 cup granulated sugar-free sweetener
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt or sour cream
  • 3 tablespoons melted butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • red food coloring drops as needed
  • 1/2 cup sugar-free white chocolate chips or dark/milk chocolate if preferred

Instructions
 

  • Get your oven ready by preheating it to 350°F (175°C). Then, line an 8x8-inch square pan with parchment paper – this makes cleanup a breeze!
  • In a large bowl, whisk together all your dry ingredients (coconut flour, tapioca starch, sugar-free sweetener, cocoa powder, baking soda, and salt) until they're well combined.
  • Now, gently fold in the Greek yogurt (or sour cream), melted butter, egg, and vanilla extract. Stir everything until it's just combined and smooth.
  • Add a few drops of red food coloring, mixing until you get that beautiful red velvet hue. You're in charge of how vibrant it looks!
  • Carefully fold in most of your sugar-free chocolate chips into the batter.
  • Pour the batter evenly into your prepared pan. If you like, sprinkle a few extra chocolate chips on top for an extra treat! Bake for about 20 minutes, or until a toothpick inserted into the center comes out mostly clean.
