Ingredients
  

  • 4 Tbsp unsalted butter (1/2 stick, or a lighter spread for a healthy touch), plus a little extra for the pan
  • 1 bag miniature marshmallows (10-ounce) (opt for natural, lower-sugar versions if available)
  • 1/2 cup smooth peanut butter (choose natural, no-sugar-added for a healthier option)
  • 6 cups puffed rice cereal (whole grain preferred!)
  • 2 pt strawberry ice cream slightly softened (try a light, low-fat, or fruit-based sorbet for a lighter treat)
  • 1 cup chopped freeze-dried strawberries for a beautiful, fruity coating

Instructions
 

  • Lightly butter an 18-by 13-inch rimmed baking sheet. In a large pot, gently melt the butter over low heat. Add the marshmallows and stir continuously until they are completely melted and smooth.
  • Remove the pot from the heat. Stir in the peanut butter until it’s perfectly smooth. Then, lightly fold in the puffed rice cereal until it’s all well coated. Transfer this mixture to your prepared baking sheet and gently press it into an even, flat layer. Pop it in the refrigerator to set for at least 20 minutes, or up to 3 hours, until firm.
  • Once the cereal base is firm, transfer it to a clean cutting board. Using a serrated knife, carefully cut the sheet into 20 even squares (or use a heart-shaped cookie cutter for a fun Valentine's twist!).
  • Generously scoop your slightly softened strawberry ice cream onto the center of half of the cereal squares, spreading it evenly to the edges.
  • Carefully top each ice cream-filled square with a plain cereal square, gently pressing down so the ice cream pushes out slightly to the edges. Roll the edges of each sandwich in the chopped freeze-dried strawberries for a lovely, vibrant finish.
  • Place the assembled sandwiches back into the freezer until they are perfectly firm, about 4 hours, or up to 2 days, ready to delight your loved ones!
