Ingredients
  

  • 12 slices mozzarella cheese pre-sliced deli style for ease
  • 24 fresh raspberries
  • 1/2 cup cream cheese softened
  • 3 tablespoons heavy cream
  • 1/4 cup powdered Swerve or your preferred erythritol/stevia blend, divided

Instructions
 

  • Get Ready: Preheat your oven to 375°F. Line two baking sheets with parchment paper (no wax paper!). Gently lay out the 12 mozzarella slices on the lined sheets, giving them a little space.
  • Whip the Filling: In a medium bowl, grab a mixer and combine the softened cream cheese, heavy cream, and just 1 tablespoon of the powdered Swerve. Beat until the mixture is wonderfully smooth and creamy.
  • Bake the Shells: Pop the mozzarella slices into the preheated oven. Bake for about 3-4 minutes, or until the edges turn a lovely golden brown. Carefully remove them from the oven and let them cool for just a few moments on the baking sheet.
  • Assemble Your Bites: On one corner of each slightly cooled cheese shell, spoon about 2 teaspoons of your creamy cheese mixture. Gently place two fresh raspberries on top of the filling – one for you, one for your sweetheart!
  • Fold and Finish: Carefully fold each cheese square in half to form a cute triangle shape. Firmly press the edges together to seal the delicious filling inside. Dust your finished turnovers with the remaining powdered Swerve for a beautiful, sweet touch.

Notes

Quick tip: You can gently flip the mozzarella shells after a few seconds of cooling for a slightly prettier finish! These turnovers taste amazing warm or chilled!
