These delightful Sweetheart Strawberry Chocolate Cookies are perfect for Valentine's Day or any sweet occasion! Made with a strawberry cake mix, they come together quickly and are wonderfully soft, topped with melted chocolate and festive sprinkles.

Ingredients
  

  • 1 (15.25 ounce) box Strawberry cake mix
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips or Valentine's candy melts
  • Valentine's sprinkles as desired

Instructions
 

  • Preheat your oven to 350°F (or 325°F if using darker cookie sheets).
  • In a big mixing bowl, combine the strawberry cake mix, vegetable oil, vanilla extract, and eggs. Stir with a spoon until everything comes together into a soft dough.
  • Chill the dough in the refrigerator for about 15-30 minutes to make it easier to handle.
  • Once chilled, roll the dough into small 1-inch balls.
  • Place these lovely little dough balls about 2 inches apart on an ungreased baking sheet.
  • Bake for 9-12 minutes, or until the tops look set and the edges are just starting to turn a light golden color.
  • Let the cookies cool on the baking sheet for a minute before carefully transferring them to a wire rack to cool completely. This takes about 30 minutes.
  • Once fully cooled, melt your chocolate chips or candy melts. You can drizzle the melted chocolate over one side of each cookie for a lighter touch, or dip the entire cookie for a richer chocolate experience.
  • Immediately add your festive Valentine's sprinkles before the chocolate sets, if you wish!
