Preheat your oven to 350°F (or 325°F if using darker cookie sheets).
In a big mixing bowl, combine the strawberry cake mix, vegetable oil, vanilla extract, and eggs. Stir with a spoon until everything comes together into a soft dough.
Chill the dough in the refrigerator for about 15-30 minutes to make it easier to handle.
Once chilled, roll the dough into small 1-inch balls.
Place these lovely little dough balls about 2 inches apart on an ungreased baking sheet.
Bake for 9-12 minutes, or until the tops look set and the edges are just starting to turn a light golden color.
Let the cookies cool on the baking sheet for a minute before carefully transferring them to a wire rack to cool completely. This takes about 30 minutes.
Once fully cooled, melt your chocolate chips or candy melts. You can drizzle the melted chocolate over one side of each cookie for a lighter touch, or dip the entire cookie for a richer chocolate experience.
