Ingredients
  

  • 2 tablespoons confectioners' sugar
  • 0.5 teaspoon pure vanilla extract
  • 21 tablespoons heavy cream 1 cup plus 5 tablespoons, divided
  • 12 mini ice-cream sandwiches
  • 1 cup semisweet chocolate chips
  • 0.5 teaspoon ground cinnamon

Instructions
 

  • In a medium bowl, combine the confectioners' sugar, vanilla extract, and 1 cup of heavy cream. Use an electric mixer on medium-high speed to beat the mixture until soft, fluffy peaks form, which usually takes about 1 to 2 minutes.
  • Line a 9x5-inch loaf pan with plastic wrap, making sure to leave a generous 4-inch overhang on all sides for easy lifting later. Spread about 1/2 cup of your freshly whipped cream evenly across the bottom of the pan. Neatly arrange 4 mini ice-cream sandwiches on top of the cream. Repeat this layering process two more times, finishing with a final layer of whipped cream. Pop the pan into the freezer for at least 8 hours, or up to 2 days, to set beautifully.
  • In a microwave-safe bowl, combine the semisweet chocolate chips, ground cinnamon, and the remaining 5 tablespoons of heavy cream. Heat on HIGH in the microwave, pausing to stir halfway through, until the mixture is completely melted and smooth (this typically takes 45 seconds to 1 minute). Allow the rich chocolate sauce to cool slightly.
  • Once firm, carefully lift the semifreddo from the freezer using the plastic wrap overhang and transfer it onto a lovely serving plate. Gently peel away and discard the plastic wrap. Drizzle the warm, cinnamon-infused chocolate sauce generously over the top. For perfect slices, use a serrated knife. Enjoy this delightful, easy-to-make dessert!
