Ingredients
  

  • Non-stick spray for mugs
  • 2 tablespoons Almond Flour
  • 2 tablespoons Swerve or Truvia or your favorite keto-friendly granular sweetener
  • 0.5 teaspoon Baking Powder
  • 2 tablespoons Unsweetened Cocoa Powder
  • Salt Pinch
  • 1 Large Egg
  • 2 tablespoons Butter melted and cooled
  • 1 tablespoon Prepared Coffee brewed
  • 10 Sugar-Free Chocolate Chips

Instructions
 

  • Begin by lightly coating the inside of two microwave-safe mugs with a bit of non-stick spray.
  • In a small mixing bowl, combine all the dry ingredients: the almond flour, unsweetened cocoa powder, your chosen sweetener (Swerve or Truvia), baking powder, and a tiny pinch of salt. Whisk them together thoroughly until well blended.
  • In a separate small bowl, whisk the egg, the melted and cooled butter, and the brewed coffee until you have a smooth mixture.
  • Gently pour the dry ingredient mixture into the wet ingredients. Whisk slowly and carefully until everything is just combined and you no longer see streaks of dry flour. Be sure not to overmix!
  • Divide the prepared batter evenly between your two mugs.
  • Microwave each mug individually for approximately 45 to 50 seconds. The cake should appear set around the edges but still wonderfully fudgy in the center. Remember, overcooking can make it rubbery, so keep an eye on it!
  • Carefully remove the mugs from the microwave (they will be hot!). Immediately sprinkle 5 sugar-free chocolate chips over the top of each warm cake. The warmth will help them melt slightly, adding an extra layer of chocolatey goodness.
  • Allow your mug cakes to cool for just a minute or two before diving in with a spoon and enjoying your healthy, delicious, and easy Valentine's treat!
