Ingredients
  

  • 1 pound lean ground beef
  • 2 tablespoons olive oil or your preferred cooking oil
  • 1/2 cup chunky salsa
  • 4-5 cups shredded green cabbage
  • 3 tablespoons taco seasoning DIY mix chili powder, garlic powder, cumin, oregano, salt, pepper!
  • 3 tablespoons water
  • 3/4 cup shredded mozzarella cheese or your favorite cheese blend
  • Salt to taste
  • black pepper to taste
  • 1/2 cup canned black beans rinsed and drained

Optional Garnishes

  • Greek yogurt healthier sour cream swap
  • fresh green onions
  • sliced avocado
  • diced tomatoes

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Add your lean ground beef and cook until it’s beautifully browned, breaking it into crumbles. Drain any excess fat for a lighter meal.
  • Stir in your favorite salsa and taco seasoning with the cooked beef. Mix well to infuse all those yummy Tex-Mex flavors!
  • Add the shredded cabbage, black beans, and water to the skillet. Give everything a good stir until combined. Taste and adjust with a little salt and pepper if needed.
  • Let the mixture gently simmer for about 12 minutes, or until the cabbage is tender and has soaked up all the delicious juices.
  • Remove the skillet from the heat and evenly sprinkle the shredded cheese over the top. Cover for a few minutes to let the cheese melt into a wonderfully gooey layer.
  • Serve your healthy and easy skillet meal warm, topped with your choice of fresh garnishes like a dollop of Greek yogurt, a sprinkle of green onions, or creamy avocado slices.
