- 1 pound lean ground beef
- 2 tablespoons olive oil or your preferred cooking oil
- 1/2 cup chunky salsa
- 4-5 cups shredded green cabbage
- 3 tablespoons taco seasoning DIY mix chili powder, garlic powder, cumin, oregano, salt, pepper!
- 3 tablespoons water
- 3/4 cup shredded mozzarella cheese or your favorite cheese blend
- Salt to taste
- black pepper to taste
- 1/2 cup canned black beans rinsed and drained

- sliced avocado
- diced tomatoes
Heat the olive oil in a large skillet over medium-high heat. Add your lean ground beef and cook until it’s beautifully browned, breaking it into crumbles. Drain any excess fat for a lighter meal.
Stir in your favorite salsa and taco seasoning with the cooked beef. Mix well to infuse all those yummy Tex-Mex flavors!
Add the shredded cabbage, black beans, and water to the skillet. Give everything a good stir until combined. Taste and adjust with a little salt and pepper if needed.
Let the mixture gently simmer for about 12 minutes, or until the cabbage is tender and has soaked up all the delicious juices.
