Equipment

  • Knife
  • Mandolin (optional)

Ingredients

  • 2 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons tamari (or soy sauce)
  • 1 clove garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1 pound cucumbers
  • 1 medium green onion sliced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons toasted sesame seeds
  • Salt and pepper to taste

Instructions

  • First, let's make the vibrant dressing! In a medium bowl, simply whisk together the fresh lime juice, fish sauce, toasted sesame oil, tamari (or soy sauce), minced garlic, and a pinch of red pepper flakes until well combined.
  • Next, prepare your crisp cucumbers. Thinly slice them into about 1/4-inch rounds, using a sharp knife or a mandolin if you have one. Place the sliced cucumbers into a large bowl along with the sliced green onion.
  • Just before you're ready to enjoy, pour the delicious dressing over the cucumbers and green onion. Gently toss everything together to coat evenly. Finish by sprinkling with fresh chopped cilantro and toasted sesame seeds for an extra burst of flavor and crunch!
