Ingredients
  

  • 1 1/4 cups blanched almond flour
  • 1/4 cup psyllium husk powder plus 2 teaspoons
  • 2 tablespoons nutritional yeast
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 3 large egg whites
  • 2 teaspoons apple cider vinegar
  • 1 cup hot water
  • 2 tablespoons Everything Bagel Seasoning optional, for topping

Instructions
 

  • Get Ready: Position an oven rack in the lower third of your oven and preheat to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat for easy baking.
  • Mix Dry Goodness: In a large bowl, combine the almond flour, psyllium husk powder, nutritional yeast, baking powder, and sea salt. Whisk them until they're well blended with no visible clumps, ensuring an even texture for your healthy buns.
  • Add Wet Ingredients: Pour the egg whites and apple cider vinegar into the bowl with the dry mixture.
  • Form the Dough: While stirring with a rubber spatula, slowly add the hot water. Continue to mix just until all ingredients are combined into a dough. Be careful not to overmix, as this can impact the final texture of your bread.
  • Shape & Season: Lightly moisten your hands (this helps prevent sticking!) and divide the dough into 4 equal portions. Shape each portion into a hamburger-sized bun. Place them neatly on your prepared baking sheet. Sprinkle the tops with Everything Bagel Seasoning if you're using it.
  • Bake to Perfection: Bake for 50 minutes to 1 hour, or until the buns have visibly doubled in size, are crisp on the outside, and sound hollow when gently tapped.
  • Cool & Enjoy: Allow the buns to cool completely before slicing. This step is crucial for the bread to set properly and achieve the best consistency.
