The Cheesiest Keto Cauliflower Mac and Cheese 🧀
This comforting and healthy Keto-friendly cauliflower mac and cheese is packed with cheesy flavor and crispy bacon, making it the perfect low-carb alternative to a classic comfort food.
First, carefully trim the stem from your large head of cauliflower and cut it into small florets, making sure each piece is no larger than 1 inch for even cooking.
Place the cauliflower florets in a medium saucepan with ½ tablespoon of Kosher salt. Add enough water to cover the cauliflower halfway. Bring the pot to a boil, then reduce the heat to low, cover, and let it simmer for about 5 minutes until the cauliflower is just tender.
Drain the cooked cauliflower very well, letting it sit in a colander for at least 5 minutes to ensure all excess water is removed. This prevents a watery sauce!
In a small saucepan, gently melt the cream cheese with the heavy cream over medium-low heat. Once combined, stir in the 1 cup of shredded cheddar cheese, whisking continuously until the cheese is completely melted and the sauce is smooth.
