  • 8 oz Lean Ground Beef ~1 cup
  • 8 oz canned Crushed Tomatoes ~1 cup
  • 1/2 medium Red Onion diced
  • 2 cloves Garlic minced
  • 4 cups Beef Broth low sodium preferred
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 Bay Leaf
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions
 

  • Start by warming up the olive oil in a large pot or saucepan over medium-high heat.
  • Add the shredded cabbage, lean ground beef, and diced onion. Cook them together for about 5 minutes, stirring now and then, until the beef is browned and the cabbage starts to soften. Sprinkle in a pinch of salt, paprika, and black pepper as it cooks.
  • Stir in the minced garlic and cook for just one more minute until you can smell its lovely aroma.
  • Pour in the beef broth to deglaze the pan (this helps scrape up any flavorful bits from the bottom!). Then, add the crushed tomatoes and the bay leaf. Season with thyme and bring the heat down to a gentle simmer.
  • Let the soup gently bubble for 15 to 20 minutes, allowing all the flavors to blend beautifully. If it gets too thick, you can add a little extra water.
  • Give it a taste and add any more salt or pepper if you like. Serve this comforting soup hot and enjoy!
