1. Combine & Mix: Pour the Fairlife skim milk, almond milk, light coconut milk, vanilla protein powder, vanilla pudding mix, vanilla extract, and salt into your Ninja Creami pint container. Using a handheld frother, mix everything really well until it's smooth and combined, making sure it doesn't go above the max fill line.
2. Freeze Solid: Place the prepared pint in the freezer and let it freeze for at least 24 hours. It needs to be completely solid for the best creamy texture.
3. Prepare for Creami: Once frozen, take the pint out. You can run it under hot water for about 60 seconds to help loosen it slightly, then carefully put it into your Ninja Creami machine. Ensure the surface of the frozen mixture is level to protect the blade.
4. First Spin: Press the "Lite Ice Cream" button for the first cycle. After it's done, check the texture. If it's still powdery, put it back in and press the "Respin" button.
5. Achieve Creaminess: Your ice cream should now be wonderfully smooth. If you prefer it even creamier, or if it's still a bit crumbly, add a tiny splash of milk (about 1 tablespoon) and respin until it reaches your perfect soft-serve consistency.
6. Add Coconut Mix-ins: Create a small hole in the center of your creamy ice cream. Spoon the unsweetened coconut shreds into this hole.
7. Mix-In Magic: Place the pint back into the machine and use the "Mix-In" button to perfectly blend the coconut throughout your ice cream.
8. Make the Chocolate Shell: In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil together. Heat in 30-second increments, stirring until completely smooth and glossy.
9. Shell & Set: Pour the melted chocolate mixture evenly over the top of your coconut ice cream. For extra flair, sprinkle a few more coconut shreds on top. Pop the pint back into the freezer for a short while until the chocolate shell hardens.
10. Crack & Enjoy! Once the chocolate is set, get ready to crack through that delicious shell and enjoy your amazing, healthy, high-protein ice cream treat!
