Ingredients
  

  • 2 1/2 Cups almond flour (or 1 cup coconut flour as an alternative)
  • 3/4 Cup sugar-free granulated sweetener
  • 1 teaspoon Baking soda
  • 1/4 teaspoon kosher salt
  • 3 Large Eggs beaten (use 4 eggs if opting for coconut flour)
  • 8 Ounces Plain Greek Yogurt or sour cream (use 1.5 cups if opting for coconut flour)
  • 2 teaspoons Vanilla Extract
  • 3 teaspoons Banana extract
  • 1/2 Cup chopped walnuts or sugar-free chocolate chips

Instructions
 

  • Get your oven ready at 350°F (175°C) and lightly grease an 8x4 inch loaf pan. A quick spray or a bit of butter works perfectly!
  • In a big bowl, whisk together your almond flour (or coconut flour), sugar-free sweetener, baking soda, and salt. Make sure there are no lumps for a smooth batter.
  • Now, pour in the beaten eggs, creamy Greek yogurt or sour cream, fragrant vanilla extract, and that wonderful banana extract. Stir everything until it's perfectly combined.
  • Gently fold in your chosen add-ins – crunchy walnuts or sweet sugar-free chocolate chips. Feel free to sprinkle a few extra on top for a pretty finish!
  • Pour the batter into your prepared loaf pan and loosely cover it with aluminum foil (this helps prevent over-browning). Pop it into the preheated oven for 45 minutes to 1 hour. If using almond flour, it can handle a little extra baking. If using coconut flour, bake until a toothpick comes out clean.
