Ingredients
  

Truffle Ganache

  • 1.33 cups frozen raspberries thawed
  • 0.25 cup powdered sugar (or less, to taste, for a healthier option)
  • 0.25 cup heavy whipping cream
  • 7 ounces quality white chocolate finely chopped
  • 1 tablespoon water

Chocolate Coating & Decoration

  • 7 ounces dark chocolate (52-70% cocoa for extra richness and antioxidants)
  • ruby chocolate or pink candy melts Optional, for decoration

Instructions
 

  • Prep Your Ingredients: First, let your frozen raspberries thaw completely. While they're thawing, finely chop your white chocolate and set it aside; smaller pieces melt much more smoothly.
  • Make Silky Raspberry Puree: Blend the thawed raspberries in a blender until they form a smooth puree. To ensure a truly luxurious ganache, strain this puree through a fine-mesh sieve to remove all the seeds. If your puree seems a bit too thick, add just a tiny splash of water to help it through.
  • Simmer the Raspberry Base: Pour your seedless raspberry puree and the powdered sugar into a saucepan. Stir them together. Bring this mixture to a gentle boil over medium heat, stirring frequently. Once it boils, reduce the heat to low and let it simmer, stirring often, until the volume has reduced by about half. This usually takes around 25 minutes and really concentrates that vibrant raspberry flavor.
  • Create the Ganache: Remove the saucepan from the heat and stir in the heavy whipping cream until everything is fully incorporated. Place your finely chopped white chocolate in a medium-sized heatproof bowl. Immediately pour the warm raspberry mixture over the white chocolate. Stir gently but continuously until all the white chocolate has melted and you have a beautifully smooth, glossy ganache. (If needed, you can place the bowl over a warm water bath to help melt the chocolate completely).
  • Chill and Shape: Cover the ganache directly with plastic wrap to prevent a skin from forming, then place it in the fridge for at least 2 hours, or until it's firm enough to easily roll. Once firm, use a small spoon or scoop to portion out the ganache (about 1 inch in diameter) and gently roll it into neat balls with your hands.
  • Dip and Decorate: Melt your dark chocolate. You can do this in the microwave in short bursts, stirring often, or using a double boiler. Using a fork, carefully dip each raspberry truffle into the melted dark chocolate, letting any excess chocolate drip back into the bowl. Place the coated truffles onto a baking sheet lined with parchment paper. For that special Valentine's touch, you can drizzle them with a little melted ruby chocolate or pink candy melts if you wish!
  • Final Set: Pop the truffles back into the fridge for about 25 minutes until the dark chocolate shell is completely firm. Enjoy your homemade, delightful Valentine's treats!
