Instructions
Prepare the Crust: Lightly grease a deep 9-inch pie plate. In a food processor, combine the crumbled chocolate sandwich cookies and 3 1/2 cups of the cocoa cereal. Pulse until finely crushed, about 8-10 times. Pour in the melted butter and process for about 30 seconds until the mixture comes together. Press this mixture firmly into the bottom and up the sides of your prepared pie plate. Pop it into the freezer for 30 minutes to set.
Make the Chocolate Pudding: In a medium saucepan, whisk together the cornstarch and 1/2 cup of sugar. Gradually whisk in the milk and egg yolks until smooth. Cook this mixture over medium heat, whisking constantly, for 6-8 minutes until it thickens beautifully. Keep whisking for another minute, then remove from heat. Stir in the chopped dark chocolate until it's completely melted and smooth. Finish by whisking in the vanilla extract and salt.
Assemble and Chill: Once your crust is chilled, arrange the sliced ripe bananas evenly over the bottom. Pour the warm chocolate pudding filling over the bananas. Place plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Transfer the pie to the refrigerator and chill for at least 8 hours, or even overnight, for the best set.
Whip and Serve: When ready to serve, beat the heavy whipping cream with the remaining 1 tablespoon of sugar on medium-high speed using an electric mixer until soft peaks form (this usually takes 1-2 minutes).
