Ingredients
  

  • 1 cup natural peanut butter unsweetened, creamy
  • 0.5 cup almond flour
  • 2-3 tablespoons powdered erythritol (or your preferred powdered sugar-free sweetener), to taste
  • 1 tsp vanilla extract (optional, but highly recommended)
  • 1 cup sugar-free chocolate chips (like Lily's or ChocZero)
  • 1 tablespoon coconut oil

Instructions
 

  • 1. Whip up the Peanut Butter Dough: In a medium bowl, combine the natural peanut butter, almond flour, powdered erythritol, and vanilla extract (if using). Stir well until a thick, uniform dough forms that's easy to handle.
  • 2. Shape Your Sweet Hearts: Press the peanut butter dough firmly into silicone heart molds. If you don't have molds, simply roll the dough into 12 small balls, then gently flatten and shape them into hearts on a parchment-lined baking sheet. Pop them into the freezer for 20-30 minutes until they're nice and firm.
  • 3. Melt the Dreamy Chocolate: While your hearts are chilling, grab a microwave-safe bowl and add the sugar-free chocolate chips and coconut oil. Heat in short 30-second bursts, stirring vigorously after each, until the chocolate is smooth and glossy. You can also use a double boiler if preferred.
  • 4. Dip and Chill to Perfection: Take the firm hearts out of the freezer. Using a fork, carefully dip each heart into the melted chocolate, making sure it's fully coated. Let any extra chocolate drip off, then place the coated hearts on a parchment-lined tray. Refrigerate for at least 15 minutes, or until the chocolate is completely set and shiny.
