Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent any sticking. This makes clean-up a breeze!
In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside for a moment.
In a large bowl, beat the softened butter, granulated sugar, and ½ cup of the powdered sugar until it’s wonderfully creamy and fluffy.
Add in the vanilla extract, almond extract, and the egg. Mix until everything is smoothly combined.
Gradually add the dry ingredients into your wet mixture. Stir gently until just combined – don't overmix for tender cookies!
Carefully fold in the pink sprinkles, making sure they’re evenly distributed throughout the dough.
Use a tablespoon to drop small balls of dough onto your prepared baking sheet. Leave about 2 inches between them so they have room to spread.
Pop them into your preheated oven for 8-10 minutes, or until the edges look lightly golden and inviting.
