Equipment

  • Saucepan
  • Medium Bowl
  • Whisk

Ingredients

For the Dreamy Topping

  • 2 ounces cream cheese softened
  • 1/4 cup heavy cream
  • 2 tablespoons powdered erythritol (or Swerve Confectioners Sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon red food coloring (optional, adjust as desired)

For the Rich Hot Chocolate

  • 1 cup unsweetened almond milk (or your preferred low-carb milk)
  • 1/2 cup heavy cream
  • 3 tablespoons sugar-free white chocolate chips
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons red food coloring (optional, adjust as desired)

Instructions

  • Let's Make the Dreamy Topping First!

  • In a medium bowl, whip your heavy cream until it forms stiff peaks – it's easier than it sounds!
  • Gently fold in the softened cream cheese, powdered sweetener, and vanilla extract until everything is wonderfully smooth and creamy.
  • Now, for that special Valentine's touch, spoon half of this delicious mixture into a separate bowl. Add a few drops of red food coloring to one of the bowls and mix until you achieve a lovely pink hue. Keep both bowls of your gorgeous topping chilled in the fridge while you prepare the hot chocolate.
  • Now for the Rich Hot Chocolate!

  • In a small saucepan, gently warm your almond milk and heavy cream over medium heat until it's nice and hot, just before it starts to simmer.
  • Remove the saucepan from the heat and whisk in the sugar-free white chocolate chips and unsweetened cocoa powder until they are completely melted and the mixture is smooth.
  • If you're going for that vibrant red, add your food coloring now and stir until it's beautifully blended throughout.
  • Pour this warm, comforting red velvet hot chocolate into two cozy mugs.
  • Swirl in the colored cream topping from the fridge, then add a dollop of the white cream topping on top for a beautiful contrast (you can use a piping bag if you want to get fancy!).
  • For a final touch, sprinkle with a little extra cocoa powder or grated sugar-free chocolate if desired. Enjoy your romantic, healthy treat!
