Cookie Dough

  • 1 cup unsalted butter softened
  • 3/4 cup powdered sugar sifted (plus extra for dusting)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour sifted (plus extra for rolling)

Filling

  • 1/2 cup strawberry jam (or your favorite high-quality jam)

Instructions
 

  • Get Ready: Preheat your oven to 325°F (160°C).
  • Cream It Up: In a stand mixer fitted with a paddle attachment, combine the softened butter, powdered sugar, salt, and vanilla extract. Beat them together on medium speed until the mixture is wonderfully light and fluffy, usually about 3-4 minutes. This creates the perfect creamy base for your cookies!
  • Mix the Dough: Gradually add the sifted all-purpose flour to the butter mixture. Mix on low speed just until everything comes together and a soft, cohesive dough ball starts to form. Be careful not to overmix!
  • Chill Time: Take the dough out of the mixer and gently knead it with your hands for about a minute until it forms a smooth ball. Wrap it tightly in plastic wrap and pop it into the fridge for at least 30 minutes. This chilling step is essential for easy rolling and shaping!
  • Roll & Cut: Lightly flour your work surface and rolling pin. Roll out the chilled dough evenly to about ¼ inch thick. Using a 3-inch round cookie cutter, cut out as many circles as you can. For half of these circles, use a 1½-inch heart-shaped cutter to create a cute cutout in the center. Reroll any dough scraps and continue cutting until all the dough is used.
  • Bake Beautifully: Carefully arrange all your whole and cutout cookie shapes onto a baking sheet lined with parchment paper. Bake for 15-20 minutes, rotating the baking sheets halfway through, until the edges are just lightly golden.
  • Cool Down: Once baked, remove the cookies from the oven and let them cool completely on the baking sheet before handling. They'll be delicate when warm.
  • Sweet Dusting: Lightly dust the cooled cookies with the heart cutouts with a little extra powdered sugar – it adds a lovely, sweet finish!
  • Assemble with Love: Spoon a small amount of your favorite strawberry jam onto the flat bottom of each whole cookie. Gently place a dusted cookie with a heart cutout on top, sugar side facing up, creating a sweet little sandwich ready to share!
