  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract optional, for extra holiday cheer!
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg freshly ground tastes amazing!

For the Crumb Topping

  • 1/4 cup cold salted butter cubed
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

  • Get Ready to Bake: Preheat your oven to a cozy 350°F (175°C). Lightly grease and flour four mini loaf pans, setting them aside for later.
  • Mix the Wet Goodness: In a large mixing bowl, beat together the softened butter, 1 cup sugar, and the dry vanilla pudding mix until it's smooth and creamy. Next, whisk in the eggnog, eggs, vanilla extract, and rum extract (if you're using it) until everything is wonderfully combined.
  • Combine the Dry Bits: Grab another bowl and whisk together the all-purpose flour, baking powder, salt, and 1/4 teaspoon nutmeg. Make sure there are no lumps!
