Ingredients
  

For the Crust

  • 2/3 cup pitted dates
  • 1 cup ground oats
  • 1/3 cup whole rolled oats
  • 1 tsp vanilla extract

For the Silky Domes

  • 1 2/3 cups full-fat canned coconut milk
  • 1 tbsp agar agar powder
  • 1 1/2 tbsp agave syrup
  • 1 tbsp vanilla extract
  • 1/2 tbsp cornstarch dissolved in 2 teaspoons water

For Toppings & Filling

  • chopped pistachios
  • pistachio liqueur optional
  • favorite jam raspberry recommended
  • pistachio butter if desired

Instructions
 

  • Prepare the Delicious Crust: Start by soaking your pitted dates in warm water for 1-2 hours until they're wonderfully soft. Drain them completely, then blend into a smooth, thick paste using an immersion or regular blender.
  • Next, gently mix in the ground oats, whole rolled oats, and vanilla extract with the date paste. Knead until you have a firm, even dough that holds together beautifully.
  • Roll out this delightful dough to about 4-5 mm thick. Use a glass or cookie cutter (the same size as your dome molds) to cut out neat circular bases. Set these aside.
  • Craft the Silky Domes: In a medium saucepan, combine the creamy coconut milk, agar agar powder (our plant-based thickener!), agave syrup, and vanilla extract. Bring this mixture to a gentle boil, stirring occasionally.
  • While it's boiling, whisk together the cornstarch with 2 teaspoons of water to create a smooth slurry. Stir this into the boiling coconut mixture. Continue to cook for another 2-3 minutes, stirring constantly, until the cream thickens perfectly.
  • Allow the cream to cool slightly for a few minutes (it should still be pourable). Then, carefully pour it into your silicone dome molds, filling them evenly. Transfer them to the fridge and let them chill for 2 to 3 hours, or until they are perfectly firm.
  • Once the domes are set, use a small spoon to gently create a little hollow in the center of each one. Fill these cavities with your favorite jam – raspberry is fantastic for a burst of fruity flavor!
  • To assemble, spread a thin layer of pistachio butter (if desired) on each oat circle base. Place a firm dome on top of each base.
  • Now for the magic! Carefully invert the entire mold to release your stunning domes. If you like, drizzle with a hint of pistachio liqueur and sprinkle with chopped pistachios for an elegant finish. Enjoy these healthy, vibrant treats!
