  • 2 cups self-rising flour
  • 1 cup frozen carrot, peas, and corn mix
  • 1 1/4 cups grated sharp cheddar cheese
  • 1 medium leek (white part only), chopped
  • 2 cups grated peeled pumpkin (approx 300g)
  • 1/2 cup red bell pepper, finely chopped
  • 3/4 cup whole milk
  • 3 large eggs, lightly beaten
  • 3/4 cup sunflower oil
  • 1 tbsp pepitas (pumpkin seeds)
  • 2 tbsp fresh flat-leaf parsley, chopped

  • Heat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
