Ingredients
  

  • 1 cup raspberries
  • 2 cups heavy cream
  • 1/4 cup keto-friendly granular sweetener (like erythritol or stevia blend)
  • 3 teaspoons powdered unflavored gelatin
  • 4 tablespoons cold water
  • 1 cup raspberries (for topping)
  • 1 tablespoon powdered low-carb sweetener (for topping)

Instructions
 

  • Bloom the Gelatin: In a medium-sized bowl, pour in the cold water. Gently sprinkle the gelatin powder evenly over the water. Let it sit undisturbed for 5 to 10 minutes; this allows the gelatin to "bloom" and soften.
  • Prepare Raspberry Puree: Take one cup of raspberries and warm them gently in a small saucepan until they're soft and juicy. Strain the warmed raspberries through a fine mesh sieve into a separate bowl, pressing gently to extract all the delicious puree and juice. Discard any remaining seeds or pulp. Set this beautiful raspberry puree aside, and keep the other cup of fresh raspberries in the fridge for later.
  • Heat Cream & Sweetener: In a separate saucepan, combine the heavy cream and your chosen keto-friendly sweetener. Heat this mixture over medium heat, stirring occasionally, until the sweetener has completely dissolved. Once dissolved, remove the pan from the heat.
  • Combine & Whisk: Slowly pour the warm cream mixture into the bowl with the bloomed gelatin, whisking vigorously as you pour. Continue whisking until the gelatin is fully dissolved and the mixture is smooth and well combined.
  • Chill to Perfection: Carefully divide the creamy panna cotta mixture among 6 small glass jars or ramekins. Place them in the refrigerator and chill for 2 to 4 hours, or until they are perfectly set and firm.
  • Add Topping & Serve: Just before serving, mix the remaining 1 tablespoon of powdered low-carb sweetener with the fresh raspberries you set aside. Spoon this vibrant raspberry topping generously over your firm panna cottas. Enjoy this elegant and healthy treat! Store any leftovers in the refrigerator.
