Ingredients
  

  • 1 cup fresh or frozen strawberries
  • 1.5 cups heavy cream
  • 8 ounces cream cheese softened
  • 1/3 cup low-carb sugar substitute (or ½ teaspoon stevia drops + ¼ teaspoon monk fruit drops), adjusted to your taste
  • 1 tsp unflavored grass-fed gelatin
  • 2 tbsp boiling water
  • 1 tsp cocoa powder
  • 2 tbsp homemade low-carb chocolate shavings or chopped sugar-free chocolate
  • Fresh mint for garnishing (optional)

Instructions
 

  • Start by gently washing your fresh or frozen strawberries under cold water. Remove any green leaves and then cut each strawberry in half. Set them aside for later.
  • In a blender or a large mixing bowl, combine the heavy cream, your prepared strawberries, the softened cream cheese, and your chosen low-carb sweetener. Blend until the mixture is beautifully smooth and creamy. If using a mixer, whip it until it’s light and fluffy. Don’t forget to scrape down the sides of the bowl to make sure everything is perfectly mixed!
  • In a small, separate cup, sprinkle the unflavored gelatin powder over the boiling water. Stir continuously for about one minute until the gelatin has completely dissolved and there are no lumps left.
  • With your blender or mixer running on a low speed, slowly pour the dissolved gelatin mixture into the strawberry cream blend. Continue to blend or whip until all ingredients are thoroughly combined and the mixture becomes wonderfully light and airy, like a delicious mousse.
  • Carefully spoon or pour this delightful strawberry fluff into individual serving glasses or dessert cups. Leave a small space, about ¼ inch, from the top rim of each glass.
  • Place your filled glasses in the refrigerator for at least 3 to 4 hours. This chilling time is essential for the dessert to set and become perfectly firm. If you're short on time, you can pop them into the freezer for 45 minutes to 1 hour for a quicker chill.
  • Once your strawberry fluff is perfectly chilled and set, it's time for the final touches! Lightly dust the top of each serving with cocoa powder, then sprinkle with the low-carb chocolate shavings. Add a fresh mint sprig and a few extra strawberry slices for a gorgeous and inviting presentation.
