Ingredients
  

Carrot Cake Bars

  • 1.75 cups all-purpose flour
  • 0.25 tsp salt
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 cup unsweetened applesauce
  • 1 cup peeled and grated carrots
  • 0.25 cup melted butter slightly cooled
  • 2 large eggs
  • 2 tsp vanilla extract
  • 0.5 cup pure maple syrup

Light Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 0.5 cup powdered sugar
  • 0.25 cup plain, unsweetened Greek yogurt
  • 0.5 tsp vanilla extract

Instructions
 

  • 1. Prepare the Dry Mix: In a large mixing bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon until well combined.
  • 2. Combine Wet Ingredients: In a separate bowl, whisk together the applesauce, grated carrots, cooled melted butter, eggs, vanilla extract, and maple syrup until smooth.
  • 3. Mix Batter: Gently add the dry flour mixture into the wet ingredients. Stir just until everything is combined and no dry streaks remain – be careful not to overmix!
  • 4. Bake the Bars: Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy lifting. Pour the carrot cake batter into the prepared dish and spread evenly.
  • 5. Bake: Place the dish in a preheated oven at 375°F (190°C) and bake for 27 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan before frosting. This is crucial for a smooth frosting experience!
  • 6. Make the Frosting: While the cake cools, beat the softened cream cheese in a bowl until light and fluffy. Stir in the Greek yogurt and beat until smooth.
  • 7. Finish Frosting: Add the vanilla extract and powdered sugar to the cream cheese mixture. Beat until the frosting is smooth and creamy.
  • 8. Frost and Serve: Once the carrot cake bars are completely cool, spread the light cream cheese frosting evenly over the top. Cut the cake into 12 equal squares and enjoy!
