Ingredients
  

Wet Ingredients

  • 1 large egg
  • 1 large egg white
  • 1/3 cup packed brown sugar
  • 1/4 cup honey
  • 1/3 cup non-fat plain Greek yogurt
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 1/4 cups shredded zucchini thoroughly squeezed dry

Dry Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions
 

  • Get Ready: Preheat your oven to 400°F (200°C). Lightly grease or line a 12-cup muffin pan.
  • Combine Wet Ingredients: In a large mixing bowl, whisk together the egg, egg white, brown sugar, honey, Greek yogurt, melted coconut oil, and vanilla extract until smooth. Gently fold in the squeezed-dry zucchini.
  • Mix Dry Ingredients: In a separate medium bowl, combine the cocoa powder, flour, baking powder, and salt.
  • Combine All: Gradually add the dry ingredient mixture to the wet ingredients, stirring just until everything is combined. Be careful not to overmix!
  • Add Chocolate & Bake: Stir in the chocolate chips. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let them cool slightly before enjoying!
