- 1 medium red bell pepper chopped
- 1/4 cup chopped onion
- 1/4 teaspoon salt
- 2 cloves garlic minced
- 1 pound bulk chorizo
- 8 large eggs
- 3 tablespoons heavy cream
- 4 ounces crumbled Cotija cheese
- Fresh cilantro (Optional) chopped, for garnish
Get Started: Place a large skillet over medium heat and add the olive oil. Once the oil shimmers, add the chopped red pepper and onion. Sprinkle lightly with salt and sauté for about 4 minutes until they just begin to soften.
