Witches' Brew Color-Changing Halloween Drink
A magical color-changing drink perfect for Halloween! Watch as your guests are amazed when the blue potion turns into a bright pinkish-red right before their eyes.

Ingredients
Base Solution
- 8 oz red cabbage finely chopped
- 4 cups boiling water
- 1 tsp baking soda
Per Serving Mix
- 1 tbsp lemon or lime juice fresh
- 1 tsp stevia crystals lime or orange flavored
- 0.5 cup sparkling water cold
Instructions
- Place the chopped red cabbage in a large saucepan and pour the boiling water over it. Cover and let it sit for 15 minutes.
- Strain the mixture through a sieve into another clean saucepan. Keep the liquid (this is your red cabbage extract) and save the leftover cabbage for another use.
- While the extract is still warm, stir in the baking soda until fully dissolved. The liquid should turn a bright blue color. Refrigerate this blue solution until ready to use.
- To make one serving, pour 2 tablespoons of the blue cabbage solution into a small glass or shot glass.
- In a separate drinking glass, combine the lemon or lime juice and stevia crystals. Stir well until the crystals dissolve.
- Add the cold sparkling water to the glass and give it a quick stir.
- Right in front of your guests, pour the blue solution into the pale acidic drink. Watch as the color dramatically changes to a bright pinkish-red!
