  • Craft the Salty-Sweet Crust: Begin by preheating your oven to a comfortable 350°F (175°C). In a bowl, finely crush the Ritz crackers – you can use your hands or a food processor, aiming for fine crumbs, not powder. Stir in the melted butter and granulated sugar until everything is nicely combined. Press this mixture firmly and evenly into an 8-inch pie pan, pushing it up the sides. Place it in the fridge for 15 minutes to firm up, then bake for about 20 minutes, or until it turns a lovely golden-brown. Let it cool on the counter while you prepare the filling.
  • Mix the Zesty Filling: In a medium bowl, whisk together the egg yolks, sweetened condensed milk, lemon zest, orange zest, and the first teaspoon of vanilla extract. Gradually add the fresh lemon and orange juices, continuing to whisk until the mixture is completely smooth and well blended. The fresh citrus brightens this step!
  • Bake and Chill to Perfection: Pour your vibrant citrus filling into the (mostly) cooled pie crust. Bake for 18 to 20 minutes.
