Ingredients
  

For the Chicken

  • 4 ounces boneless, skinless chicken breast thinly sliced
  • salt to your taste
  • pepper to your taste
  • garlic powder to your taste
  • 1/4 cup sugar-free BBQ sauce plus extra for drizzling

For the Power Bowl

  • 3 cups chopped romaine lettuce or your favorite greens
  • 1/3 cup halved cherry tomatoes
  • 1/4 cup shredded cheddar cheese or crumbled blue cheese/Monterey Jack for a twist!
  • 1/4 cup sliced avocado
  • 1/4 cup shredded carrot
  • 2 tablespoons Greek yogurt ranch dressing homemade or store-bought for a lighter option
  • 1/4 cup thinly sliced red onion optional, but adds a nice tang!

Instructions
 

  • Warm a non-stick pan over medium-high heat. Season your chicken breast on both sides with a pinch of salt, pepper, and garlic powder. Cook for a few minutes per side until it's fully cooked through (an instant-read thermometer should show 165°F).
  • Remove the chicken from the pan, let it rest for about 10 minutes on a cutting board, then dice into bite-sized pieces. In a small bowl, gently toss the diced chicken with ¼ cup of BBQ sauce until coated. If you prefer warm chicken, you can pop it in the microwave for a moment.
  • Grab a large salad bowl and add the crisp romaine lettuce. Artfully arrange the BBQ chicken, vibrant cherry tomatoes, creamy sliced avocado, crunchy shredded carrots, and a sprinkle of red onion (if using). Finish your masterpiece with the ranch dressing and a final drizzle of extra BBQ sauce for that irresistible flavor!

Notes

The thinly sliced red onion is optional, but it adds a nice tang to the power bowl!
