Ingredients
  

  • 6 ounces unsalted butter (1 ½ sticks)
  • 13 ounces plain or sweetmeal digestive biscuits (about 2 ½ cups crushed graham crackers)
  • 1 cup lime juice and zest from 8 large limes
  • 2.5 cups heavy cream (or double cream)
  • 14 oz can sweetened condensed milk
  • Fresh lime slices (Optional, for decoration)

Instructions
 

  • Prepare the Base: In a small saucepan, gently melt the butter. Once melted, remove from heat and stir in the crushed biscuits until well combined.
  • Form the Crust: Press the biscuit mixture firmly and evenly into the bottom of a 9-inch deep loose-bottomed fluted flan tin. Place in the refrigerator to chill while you prepare the filling.
  • Make the Filling: In a large mixing bowl, pour in the fresh lime juice. Add the heavy cream and sweetened condensed milk. Whisk these ingredients together for 1 to 2 minutes until just combined and slightly thickened.
  • Add Zest: Gently stir in the lime zest into the filling mixture.
  • Assemble and Chill: Pour the creamy lime filling over the chilled biscuit base. Place the tin on a tray and return it to the refrigerator. Allow it to chill for at least 2 hours, or until the pie is firm and set.
