  • 0.5 teaspoon Xanthan Gum
  • 1 orange zest from 1 orange
  • 0.25 cup Heavy Whipping Cream
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 0.5 cup Unsweetened Dried Cranberries
  • 0.33 cup Swerve Confectioner's Sugar Substitute for the buns

For the Icing

  • 0.5 cup Swerve Confectioner's Sugar Substitute for the icing
  • 1 teaspoon Vanilla Extract for the icing
  • Heavy Whipping Cream as needed for icing consistency

  • Get Ready: Preheat your oven to 350Β°F (175Β°C).
  • Melt the Cheeses: In a microwave-safe bowl, gently melt the mozzarella and cream cheese together. Heat in short bursts (about 30 seconds at a time), stirring between each, until they are completely melted and smoothly combined. This creates our unique low-carb dough base!
  • Mix the Dough: Transfer the melted cheese mixture to a larger mixing bowl. Add the almond flour, baking powder, β…“ cup Swerve, 1 teaspoon vanilla, the egg, xanthan gum, ΒΌ cup heavy whipping cream, and the fresh orange zest. Beat everything together until all ingredients are well combined into a sticky dough.
  • Fold in Cranberries: Gently fold the dried cranberries into the dough, distributing that lovely fruity flavor throughout.
  • Shape the Buns: Lightly moisten your hands with water – this trick helps prevent the dough from sticking. Shape the dough into 10 evenly sized, cute mini buns.
  • Bake to Perfection: Place your shaped buns into a well-greased baking dish. Bake for about 25 minutes, or until they are lightly golden brown and cooked through. Let them cool down a bit before you add the sweet topping.
