Ingredients
  

  • 6 large eggs
  • 3 tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp Sriracha (adjust to your preferred spice level)
  • Pinch salt
  • Pinch black pepper
  • Smoked paprika for a vibrant garnish

Instructions
 

  • Perfectly Boil Your Eggs: Gently place the eggs in a medium saucepan and cover them completely with cold water. Bring the water to a rapid boil over high heat, then immediately turn off the heat. Let the eggs sit covered in the hot water for exactly 12 minutes to cook through.
  • Quick Cool Down: While the eggs are resting, prepare a large bowl half-filled with cold water and plenty of ice. Carefully transfer the hot eggs from the pot into this ice bath. Let them cool down completely – this makes them super easy to peel!
  • Prep for Filling: Once cooled, remove the hard shells from the eggs and slice each egg neatly in half lengthwise. Gently scoop out the bright yellow yolks into a small food processor or a small mixing bowl. Arrange the clean, empty white halves on your favorite serving platter.
  • Whip Up the Zesty Filling: To the egg yolks, add the light mayonnaise, Dijon mustard, Sriracha, and a sprinkle of salt and pepper. If using a food processor, blend until perfectly smooth and creamy. If mixing by hand, mash and stir until everything is well combined and lump-free.
  • Fill and Serve: Spoon the creamy yolk mixture into a piping bag (or a regular ziploc bag with one corner snipped off for a makeshift piping bag). Neatly pipe or spoon the delicious filling back into each egg white half.
  • Garnish with a Flair: For a final touch, lightly dust each deviled egg with smoked paprika or a tiny pinch of cayenne pepper for extra color and a hint of smoky flavor. Serve immediately and enjoy this healthy, protein-packed treat!
