  • 1/2 cup raw unsalted almonds
  • 1 cup unsweetened pitted dates
  • 1/4 cup walnuts or pecans
  • 1/3 cup shredded unsweetened coconut (plus extra for rolling)
  • 1 fresh lime zest
  • 1/4 to 1/3 cup fresh lime juice (from about 2 limes)
  • 1/8 teaspoon salt
  • 1-2 tablespoons honey or maple syrup Optional, for added sweetness

Instructions
 

  • Start by placing the raw almonds into a food processor. Pulse them a few times until they are finely chopped, but not a powdery flour.
  • Next, add the pitted dates, walnuts (or pecans), the 1/3 cup of shredded coconut, lime zest, fresh lime juice, and salt to the food processor. If you're looking for a touch more sweetness, add the optional honey or maple syrup now.
  • Process the mixture, pausing to scrape down the sides of the bowl as needed, until it forms a sticky, uniform "dough." You can leave it slightly chunky for texture or blend until very smooth, depending on your preference.
  • Once the mixture is ready, take small portions and roll them into individual bite-sized balls. If the mixture feels too sticky to handle, lightly moisten or oil your hands with a touch of coconut oil.
  • For an extra burst of tropical flavor and pretty presentation, roll the formed energy bites in additional shredded coconut or a sprinkle of fresh lime zest.
