Ingredients
  

  • 2 medium onions
  • 1/4 cup oat fiber
  • 1/4 cup pork panko or crushed pork rinds
  • 1/4 cup super fine almond flour
  • 1/4 cup grated parmesan cheese
  • 1 large egg beaten
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon smoked paprika
  • Olive oil for spraying

Instructions
 

  • First, slice your onions into ½-inch thick rings. Gently separate the rings and remove any thin inner skins.
  • Prepare your breading station: pour the beaten egg into one shallow dish.
  • In another shallow dish, combine the pork panko, almond flour, parmesan cheese, garlic salt, and smoked paprika. Whisk them together well.
  • Place the oat fiber in a third shallow dish. Take an onion ring, dip it into the oat fiber, tapping off any extra. Then dip it into the egg, letting any excess drip away.
  • Next, gently coat the ring in the dry breading mixture. Don't press too hard; aim for a light, even layer.
  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • Lightly spray your air fryer basket with olive oil. Arrange a single layer of breaded onion rings inside.
  • Give the rings another good spray of olive oil, then air fry for 8-10 minutes, or until they're beautifully golden and crispy.
  • Repeat with the rest of the onion rings. As soon as a batch is done, sprinkle with a pinch of salt to help it stick. Serve immediately with sugar-free ketchup or your favorite healthy dip!
