First, slice your onions into ½-inch thick rings. Gently separate the rings and remove any thin inner skins.
Prepare your breading station: pour the beaten egg into one shallow dish.
In another shallow dish, combine the pork panko, almond flour, parmesan cheese, garlic salt, and smoked paprika. Whisk them together well.
Place the oat fiber in a third shallow dish. Take an onion ring, dip it into the oat fiber, tapping off any extra. Then dip it into the egg, letting any excess drip away.
Next, gently coat the ring in the dry breading mixture. Don't press too hard; aim for a light, even layer.
Preheat your air fryer to 375°F (190°C) for 5 minutes.
Lightly spray your air fryer basket with olive oil. Arrange a single layer of breaded onion rings inside.
Give the rings another good spray of olive oil, then air fry for 8-10 minutes, or until they're beautifully golden and crispy.
Repeat with the rest of the onion rings. As soon as a batch is done, sprinkle with a pinch of salt to help it stick. Serve immediately with sugar-free ketchup or your favorite healthy dip!
