Ingredients
  

  • 4 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 0.5 cup basil pesto
  • 8 ounces fresh mozzarella sliced
  • 1 cup cherry tomatoes halved

Instructions
 

  • Start by preheating your oven to 425°F (220°C) and lightly grease a large baking dish.
  • Arrange the chicken breasts in a single layer in the prepared dish, then drizzle with olive oil.
  • Season both sides of the chicken generously with salt, black pepper, paprika, garlic powder, and Italian seasoning.
  • Evenly spread a layer of basil pesto over both sides of each chicken breast. A spoon or tongs can help you coat them thoroughly.
  • Top each chicken breast with fresh mozzarella slices and colorful halved cherry tomatoes.
  • Cover the dish with foil and bake for 25 minutes. Then, remove the foil and continue baking for another 10-15 minutes, or until the cheese is beautifully melted and bubbly, and the chicken is cooked through (internal temperature 165°F/74°C).
