  • 1 1/2 pounds Ground chicken

Sauce for Coating and Topping

  • 1/3 cup Buffalo sauce (for coating)
  • 3 tablespoons Unsalted butter
  • 1/3 cup Ranch dressing (optional, for serving)

Instructions
 

  • Get Ready: Preheat your oven to a cozy 400°F (204°C). Line a baking sheet with parchment paper for easy cleanup.
  • Mix the Base: In a large bowl, whisk together the parmesan cheese, almond flour, egg, the first portion of buffalo sauce, salt, and pepper. Then, gently fold in the crumbled blue cheese and sliced green onions.
  • Add the Chicken: Now, add the ground chicken to your bowl. Mix it just until everything is combined, but be careful not to overmix, as this keeps your meatballs tender!
  • Shape & Bake: Roll the mixture into 1-inch meatballs and place them on your prepared baking sheet. Bake them for about 10-12 minutes, or until they're cooked through and lightly golden.
  • Whip up the Sauce: While the meatballs are baking, combine the remaining 1/3 cup buffalo sauce and unsalted butter in a small bowl. Heat it up in the microwave or a small saucepan until the butter is melted and the sauce is smooth and hot.
  • Toss & Serve: Once the meatballs are out of the oven, gently toss them with your warm buffalo sauce mixture until fully coated.
