Cinnamon Roll Energy Bites ✨

Ingredients
  

  • 2 cups almond flour
  • 4 tablespoons sugar-free granulated sweetener
  • 2 teaspoons ground cinnamon
  • Pinch kosher salt
  • 1/2 cup unsalted butter melted
  • 2 teaspoons vanilla extract
  • 9 ounces sugar-free white chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

  • Start by lining a half sheet pan with parchment paper. This prevents sticking and makes cleanup a breeze!
  • In a medium mixing bowl, combine the almond flour, sweetener, cinnamon, and salt. Stir these dry ingredients well until everything is evenly mixed.
  • Next, add the melted butter and vanilla extract to the dry mixture. Mix thoroughly until a thick, uniform dough forms. It should be easy to work with.
  • Scoop out the dough using a tablespoon measure. Roll each scoop into a neat ball (you should get about 24 energy bites) and place them on your prepared sheet pan, leaving a little space between each. Pop them into the freezer for 20 minutes to firm up.
  • While the balls are chilling, prepare your delicious chocolate coating. Place the sugar-free white chocolate chips and coconut oil in a medium-sized heatproof bowl.
  • Fill a saucepan halfway with water and bring it to a gentle simmer over low-medium heat. Set the bowl of chocolate over the simmering water (making sure the bottom of the bowl doesn't touch the water). Stir often until the chocolate is smooth and completely melted. Carefully remove it from the heat.
  • Take the chilled balls from the freezer. Dip each ball into the melted chocolate mixture, coating it completely. Place the coated balls back onto the parchment-lined sheet pan.
  • Once all the balls are dipped, return them to the freezer for another 10 minutes to set the chocolate coating.
