  • 0.5 cup pumpkin puree ensure it's pure pumpkin, not pie filling
  • 1 cup your favorite milk dairy or plant-based works great!
  • 2 tablespoons maple syrup or preferred healthy sweetener
  • 1 teaspoon pumpkin pie spice
  • 0.5 teaspoon vanilla extract

Instructions
 

  • In a medium bowl or a jar with a lid, combine the pumpkin puree, milk, maple syrup, pumpkin pie spice, vanilla extract, and salt. Whisk everything together until the mixture is completely smooth and well blended.
  • Sprinkle in the chia seeds and stir them into the pumpkin mixture. Make sure they are evenly distributed so they can absorb the liquid properly.
  • Let your mixture sit for about 10 minutes. Then, give it another thorough stir to break up any chia seed clumps and ensure an even texture.
  • Cover the bowl or jar and place it in the refrigerator. Allow it to chill for at least 4 hours, or even better, let it sit overnight. This time lets the chia seeds expand and create that wonderfully thick, pudding-like consistency.
  • Once perfectly chilled and thick, spoon your healthy pumpkin chia pudding into serving bowls or glasses. Add any desired summer-fresh toppings, and enjoy this easy, nutritious treat!
