- 1 large head Cauliflower (about 6 cups florets, most stems removed)
- 1 teaspoon Olive oil
- 2 cloves Garlic (minced)
- 2 tablespoons Unsalted butter (cut into chunks)
- 2 tablespoons Cream cheese (cut into chunks)
- 3/4 teaspoon Sea salt (to taste)
- Chives (optional, for garnish)
Prep & Cook Cauliflower: Start by cutting your large head of cauliflower into florets, making sure to remove most of the tough stems for the smoothest texture. To cook, you can either steam or microwave it until very soft.
Steaming Method: Fill a large saucepan with enough salted water to sit just below a steamer basket. Bring the water to a boil, then place the cauliflower florets in the basket. Cover the pan and let it simmer for 10-15 minutes, until the cauliflower is incredibly tender and mushy (much softer than you’d usually cook it).
Microwave Method: Place florets in a large bowl with 1/2 cup water, cover tightly with plastic wrap, and microwave for 10-15 minutes until very soft.
Once cooked, drain any excess water thoroughly. Drying the cauliflower well is key for a non-watery mash! Sauté Garlic: While the cauliflower cooks, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for just about one minute until it becomes fragrant. This step mellows the garlic flavor, making it perfect for your mash.
Blend to Creamy Perfection: Transfer the very soft, well-drained cauliflower, sautéed garlic, chunks of butter, cream cheese, and sea salt into a food processor. Puree for 1-2 minutes, or even longer if needed, until the mixture is completely smooth and wonderfully silky. Don't rush this part – pureeing for longer ensures an ultra-creamy consistency!
