Instructions
In a large bowl, combine the thinly sliced cucumbers, diced avocados, and finely chopped red onion.
Pour over the fresh lemon juice and olive oil, then season with sea salt and black pepper.
Gently toss everything together, being careful not to mash the avocados.
Finish by sprinkling chopped parsley on top and give it a final gentle toss before serving.
