Ingredients
  

  • 2 medium Cucumbers about 200 grams each
  • 2 ripe Avocados about 150 grams each
  • 0.25 cup Red Onion about 40 grams
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 0.5 teaspoon Sea Salt to taste
  • 0.25 teaspoon Black Pepper freshly ground
  • 2 tablespoons Fresh Parsley chopped

Instructions
 

  • In a large bowl, combine the thinly sliced cucumbers, diced avocados, and finely chopped red onion.
  • Pour over the fresh lemon juice and olive oil, then season with sea salt and black pepper.
  • Gently toss everything together, being careful not to mash the avocados.
  • Finish by sprinkling chopped parsley on top and give it a final gentle toss before serving.

Notes

Feel free to adjust the seasoning to your taste. This salad is best enjoyed fresh.
