  • 1/4 cup Mascarpone cheese
  • 1 cup Heavy cream cold, divided: 3/4 cup and 1/4 cup
  • 3 tablespoons Unsweetened cocoa powder
  • 1/2 cup Powdered monk fruit allulose blend or your preferred powdered sugar-free sweetener
  • 1 cup Pomegranate seeds plus extra for garnish
  • 1/2 cup Shelled pistachios
  • Whipped cream optional, for topping

Instructions
 

  • In a large bowl, gently beat the mascarpone cheese with 1/4 cup of the cold heavy cream until it becomes wonderfully smooth and creamy.
  • In a separate bowl, whisk together the remaining 3/4 cup of cold heavy cream, cocoa powder, and your powdered sweetener. Continue beating until soft peaks elegantly form – be careful not to over-whip!
  • Carefully fold the chocolate cream into the mascarpone mixture using a spatula until it's just combined and no white streaks remain. Keep it gentle to maintain the airy texture.
  • Begin layering! Spoon half of your luscious chocolate mousse into four small dessert cups or glasses. Then, generously sprinkle some bright pomegranate seeds and crunchy pistachios over the mousse layer. Repeat this process with the remaining mousse to create a beautiful second layer.
  • If you desire, top your parfaits with a dollop of whipped cream, a light dusting of cocoa powder, and a few more vibrant pomegranate seeds for a pretty finish. Enjoy this delightful treat right away!
