Easy Chicken Bacon Ranch Casserole

Ingredients
  

  • 4 cups cooked boneless, skinless chicken breast cubed or shredded
  • 8 slices cooked bacon chopped
  • 3 cloves garlic minced
  • 1 cup healthy ranch dressing homemade or clean store-bought
  • 1 cup shredded mozzarella cheese divided
  • 1 cup shredded cheddar cheese divided
  • 5 cups fresh or frozen broccoli florets pre-cooked

Instructions
 

  • Preheat your oven to 375°F (191°C).
  • Prepare your veggies: If using broccoli, lightly steam it for 1-2 minutes until bright green. If using frozen spinach (optional alternative), thaw and squeeze out excess water really well.
  • In a large mixing bowl, combine the cooked chicken, chopped bacon, pre-cooked veggies, minced garlic, ranch dressing, and half of both the mozzarella and cheddar cheeses. Stir everything together until well coated.
  • Spoon this delicious mixture into a 9x13 inch casserole dish.
  • Sprinkle the remaining shredded mozzarella and cheddar cheeses evenly over the top.
  • Bake for about 15 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden. Serve hot and enjoy!
