Ingredients
  

  • 1 pound ground beef
  • 1 red bell pepper diced
  • 1 can crushed pineapple 20-ounce, drained (reserve the juice for the sauce)
  • 1/2 cup BBQ sauce
  • 1/2 cup pineapple juice from the canned pineapple
  • 3 tbsp soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1/2 tsp ground ginger
  • 1 1/2 tsp garlic powder
  • 1 tbsp cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • Buns or rolls for serving

Instructions
 

  • Start by browning your ground beef in the Instant Pot using the Saute setting, breaking it into small pieces as it cooks. Once browned, drain any excess grease for a healthier meal and press Cancel.
  • Stir in the vibrant diced red bell pepper and the sweet crushed pineapple with the beef in the pot.
  • In a separate small bowl, whisk together the BBQ sauce, reserved pineapple juice, soy sauce, brown sugar, rice vinegar, ground ginger, and garlic powder until beautifully combined.
  • Pour this delicious sauce over the beef and pineapple mixture in the Instant Pot, giving everything a good stir to combine.
  • Secure the lid, set the venting knob to the Sealing position, and cook on High Pressure for just 2 minutes. Once the cooking cycle is complete, perform a quick pressure release.
  • Carefully remove the lid. If you prefer a thicker sauce, stir in the optional cornstarch slurry and let it simmer for a couple of minutes until it reaches your desired consistency. Spoon this tropical goodness onto your favorite whole wheat buns or even crisp lettuce wraps for a lighter option!
